More on the process of making the cheese: The milk sits all day in the pot until it reaches a gel like consistancy. Then you cut the "curd" and strain it out into a cloth to drain out all the Whey

Over night all the whey drains out and you then add salt and other ingredients to tast and mold it if you like. This is like farmer cheese.

Making Neufchatel at home

This is the Neufchatel made with one gallon whole milk, my first rennet cheese. I have made yogurt and Labneh which is yogurt cheese and hope to make cream cheese next.

So we went to see Brain, Ellen, Gwen and Trev . Dad and Spike were there. It was great. Gwendolyn is so good with Sofia, Trevor is good too. She was playing hard in the Nacho hut and retrieving balls for Trevor off the deck. We drove to Eagle Rosk to meet Olive Kuska and see Rebecca and Eric again. What a cute house they have. Then it was on to laguna beach to see the cousins on the other side. Fun at the beach and surfing. Sofia loves her full suit and loved the sensation of riding the bogie board. At one and a half thats pretty cool. She is talking in sentences and communicated well.
