Over night all the whey drains out and you then add salt and other ingredients to tast and mold it if you like. This is like farmer cheese.

Making Neufchatel at home

This is the Neufchatel made with one gallon whole milk, my first rennet cheese. I have made yogurt and Labneh which is yogurt cheese and hope to make cream cheese next.
